These coffee beans consist of both yellow and red Caturra and Catuai varietals. They are processed using a unique method called “miel” or honey, which leaves all of the fruit or “mucilage” intact on the coffee beans while they are dried, giving them a beautiful, bright yellow color. The honey process also gives the coffee an intense sweetness, heightened complexities, and a more defined body.
